Jane’s Swedish Almond Cake Recipe

Jane’s Swedish Almond Cake

1 ¼ cups white sugar

1 stick butter (1/2 cup)

1 egg

2/3 cups “whole milk”

1 ¼ cups flour

½ tsp baking powder

2 tsp pure almond extract

Using a whisk, mix all ingredients well, gradually add 1 stick of melted butter into the batter – mix well

Spray Bundt pan or fluted long loaf pan with cooking spray. Pour batter in and bake at 350 degrees for 35 to 40 minutes – or until edges are golden brown and a toothpick comes out clean.

Once cooled, garnish with seasonal fruit and sift confectioners sugar on top.
